    About the Book

Jharkhand is rich in edible weeds and green leafy vegetables, with over 70 species providing vital nutrition for tribal and rural communities. These vegetables, mainly from herbaceous plants but also some woody plants, are harvested during the rainy and summer seasons from fields and forests. They are consumed fresh, cooked, or dried for off-season use, contributing to dietary diversity, food security, and nutritional health. Sold in local markets, they also provide supplemental income. Nutritionally, these greens are rich in minerals, antioxidants, vitamins, and fibers, offering health benefits like protecting against oxidative stress, supporting heart health, and improving cognitive function. Traditionally used in treating various ailments, these vegetables play a crucial role in the well-being of Jharkhand’s tribal populations.

In this book, forty-six species of the leafy vegetables have been described which are mostly consumed by tribal and poor rural people of Jharkhand. The information on botanical description, local name, parts consumed, phytochemical constituents and nutritional properties have also been covered. These underutilized leafy vegetables can be obtained from different plant types such as herbs, shrub, trees and creepers. The parts most commonly consumed are leaves, tender shoots, buds, flowers and floral buds.
